  • 8 flour tortillas
  • 1 cup enchilada sauce (store-bought or homemade)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. Cook chicken in boiling water or broth for 15-20 minutes until tender, then shred using two forks.
