  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1/4 cup freshly squeezed lemon juice
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Sauté diced onion, carrots, and celery until softened (about 5 minutes).
  2. Add chicken breasts and season generously with salt and pepper. Cook until lightly browned on all sides.
  3. Pour in chicken broth and add minced garlic; let simmer for about 10 minutes.
  4. Reduce heat to low, stir in heavy cream and lemon juice; simmer gently for another 5 minutes.
  5. Remove chicken from the pot once cooked through (about 15 minutes total) and shred using two forks.
  6. Return shredded chicken to the pot along with chopped parsley. Serve hot with crusty bread.
