Ingredients

Scale
  • 2 cups fresh corn (about 4 ears)
  • 2 medium Yukon Gold potatoes, peeled and diced (about 1 cup)
  • 1 medium onion, finely chopped (about 1 cup)
  • 2 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream or half-and-half

Instructions

  1. In a large pot over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  2. Add the diced potatoes and fresh corn; mix well and allow to cook for about 3 minutes.
  3. Pour in the vegetable broth and bring to a gentle boil. Reduce heat to simmer and cook until the potatoes are tender, approximately 10 minutes.
  4. Blend the soup using an immersion blender or transfer batches to a regular blender until smooth, leaving some texture if desired.
  5. Stir in the heavy cream or half-and-half; let it simmer on low heat for another 5 minutes.
  6. Season with salt and pepper to taste before serving. Garnish with chives or crispy bacon bits if desired.
