Creamy Copycat Cauliflower Puree is a luxurious, guilt-free alternative to traditional mashed potatoes. Ingredients

  • 1 head cauliflower (about 2 pounds)
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 6 cloves garlic
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cut the cauliflower into florets, rinse under cold water, and pat dry.
  2. In a large pot, bring salted water to a boil. Add the cauliflower florets and cook until fork-tender (about 10 minutes).
  3. Wrap garlic cloves in aluminum foil with a small pat of butter and roast at 400°F for 15-20 minutes until golden brown.
  4. Drain the cauliflower and transfer it to a food processor. Add roasted garlic, butter, heavy cream, salt, pepper, and Parmesan cheese. Blend until smooth.
  5. Adjust seasoning as needed and serve garnished with additional Parmesan or herbs.
