  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 8 oz spaghetti or fettuccine pasta
  • 8 oz fresh mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • ½ cup panko breadcrumbs
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. Cook spaghetti in salted water until al dente; drain and set aside.
  3. In a skillet over medium heat, melt butter. Sauté mushrooms and garlic until fragrant.
  4. Add diced chicken, season with salt and pepper, and cook until no longer pink.
  5. Stir in heavy cream and chicken broth; bring to a simmer before adding Parmesan cheese until melted.
  6. Combine cooked pasta with the creamy sauce and transfer to the baking dish.
