  • 12 jumbo pasta shells
  • 2 cups cooked, shredded boneless skinless chicken breasts (about 34 breasts)
  • 1 cup fresh spinach, chopped
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese (divided)
  • ¼ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. Cook the jumbo pasta shells in boiling salted water until al dente, then drain carefully.
  3. In a skillet over medium heat, cook the seasoned chicken until golden brown; shred it once cooked. In a bowl, mix shredded chicken with spinach, half the mozzarella cheese, garlic powder, salt, and pepper.
  4. Fill each pasta shell with the chicken mixture and place them in the prepared baking dish.
  5. Pour Alfredo sauce over the stuffed shells and sprinkle with remaining mozzarella and Parmesan cheese.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until bubbly.
