This comforting dish combines the flavors of fresh broccoli and cauliflower with aromatic garlic and onion, creating a velvety texture that soothes the soul. Quick to prepare and packed with nutrition, it’s an ideal choice for busy weeknights or cozy gatherings. Enjoy it as a hearty main course or a delightful side dish that will leave everyone asking for more.

Ingredients

Scale
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut milk for a lighter version)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and chopping the broccoli and cauliflower into bite-sized pieces. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté the onion until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Add the chopped broccoli and cauliflower to the pot, stirring for about two minutes to coat them in the oil mixture.
  4. Pour in vegetable broth until all veggies are covered. Bring to a boil, then reduce heat and let simmer uncovered for 15-20 minutes until tender.
  5. Blend the soup until smooth using an immersion blender or standard blender. For texture, pulse gently if desired.
  6. Return blended soup to low heat, stir in heavy cream (or coconut milk), season with salt and pepper as needed, and serve warm.
