  • 1 cup wild rice
  • 8 oz fresh mushrooms (mixed cremini and button)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (plus extra for garnish)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add diced onion and minced garlic; sauté until fragrant and translucent.
  2. Stir in chopped mushrooms, thyme, and bay leaf until the mushrooms brown slightly and release their moisture.
  3. Pour in vegetable broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
  4. Add wild rice, cover, and let simmer for about 40 minutes until tender.
  5. Reduce heat to low. Stir in heavy cream and grated Parmesan cheese until melted; season with salt and pepper.
  6. Serve warm, garnished with extra Parmesan if desired.
