- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil or butter over medium heat. Add diced onion and minced garlic; sauté until fragrant and translucent.
- Stir in chopped mushrooms, thyme, and bay leaf until the mushrooms brown slightly and release their moisture.
- Pour in vegetable broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
- Add wild rice, cover, and let simmer for about 40 minutes until tender.
- Reduce heat to low. Stir in heavy cream and grated Parmesan cheese until melted; season with salt and pepper.
- Serve warm, garnished with extra Parmesan if desired.
