- ¼ cup toasted pine nuts (optional)
- Olive oil, salt, and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Cut the squash in half, scoop out seeds, drizzle with olive oil, season with salt and pepper, and roast cut-side down for 25-30 minutes until tender.
- Cook spaghetti according to package instructions until al dente. Reserve some pasta water before draining.

- Whisk together eggs and Parmesan in a bowl; add garlic and sage.
- Once the squash is done roasting, scoop the flesh into the skillet with bacon. Add drained spaghetti and quickly pour in the egg mixture while tossing off heat to avoid scrambling.
