  • 8 oz spaghetti
  • 1 medium butternut squash (about 2 cups roasted)
  • 4 oz thick-cut bacon
  • 1 cup freshly grated Parmesan cheese
  • 2 large eggs
  • 3 cloves garlic, minced
  • 4 fresh sage leaves, finely chopped
  • ¼ cup toasted pine nuts (optional)
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the squash in half, scoop out seeds, drizzle with olive oil, season with salt and pepper, and roast cut-side down for 25-30 minutes until tender.
  2. Cook spaghetti according to package instructions until al dente. Reserve some pasta water before draining.
  3. In a skillet over medium heat, cook chopped bacon until crispy. Remove excess fat while leaving a thin layer in the pan.
  4. Whisk together eggs and Parmesan in a bowl; add garlic and sage.
  5. Once the squash is done roasting, scoop the flesh into the skillet with bacon. Add drained spaghetti and quickly pour in the egg mixture while tossing off heat to avoid scrambling.
  6. Add reserved pasta water gradually until reaching desired creaminess. Toss in pine nuts if using, season to taste, and serve hot.
