  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 large carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 4 cups low-sodium chicken broth
  • 2 cups Yukon Gold or red potatoes, cubed
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Prep your ingredients by washing and chopping all vegetables: dice onions finely, slice carrots and celery into bite-sized pieces, and cube potatoes.
  2. In a large pot, heat 2 tbsp olive oil over medium heat. Sauté onions until translucent; add garlic and cook until fragrant.
  3. Add diced chicken breasts seasoned with salt and pepper; sauté until lightly browned.
  4. Stir in carrots, celery, potatoes, and chicken broth. Bring to a gentle boil while stirring occasionally.
  5. Once boiling, reduce heat to low and add thyme and rosemary. Simmer for about 30 minutes until chicken is tender and veggies are cooked through.
  6. Stir in lemon juice before serving.
