  • 1 cup whole grain farro
  • 1 cup dried cranberries (preferably unsweetened)
  • 1 cup fresh spinach (or kale), chopped
  • ½ cup walnuts or pecans, toasted
  • ½ cup crumbled feta cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse farro under cold water until clear. In a saucepan, combine farro with 3 cups of water; bring to a boil. Reduce heat and simmer uncovered for about 30 minutes until tender yet chewy.
  2. While farro cooks, heat olive oil in a skillet over medium heat. Add chopped spinach (or kale) and sauté until wilted, about 3 minutes.
  3. Add dried cranberries along with salt and pepper; stir gently until heated through.
  4. Once farro is cooked, drain excess water and combine it in a large bowl with the sautéed mixture.
  5. Crumble feta cheese over the salad while warm and drizzle with lemon juice; toss well to combine.
  6. Serve warm as a side or main dish, garnished with extra nuts or herbs if desired.
