  • 8 oz penne pasta
  • 2 cups mixed vegetables (zucchini, bell peppers, spinach)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water in a large pot and cook the penne pasta until al dente; drain.
  3. In a skillet over medium heat, drizzle olive oil and sauté minced garlic with mixed vegetables until tender (about 5 minutes).
  4. In a large bowl, combine cooked pasta, sautéed veggies, cream cheese, Italian seasoning, salt, and pepper; mix well.
  5. Fold in half of the shredded cheeses then transfer the mixture to a greased baking dish.
  6. Top with remaining shredded cheese and bake for 25-30 minutes until golden brown and bubbly.
