  • 1 medium onion, chopped
  • 1 cup mixed bell peppers, chopped
  • 14.5 oz canned diced tomatoes (with herbs)
  • 2 cups frozen mixed vegetables
  • 2 cups shredded cheddar cheese
  • 1 tsp seasoning salt
  • Optional: 2 medium potatoes, thinly sliced

Instructions

  1. Preheat oven to 350°F (175°C). In a skillet over medium heat, brown the ground beef until no longer pink.
  2. Add onions and bell peppers; sauté until onions are translucent (about 5 minutes).
  3. Stir in canned tomatoes and frozen vegetables. Season with seasoning salt and mix well.
  4. In a greased baking dish, layer half of the meat mixture followed by half of the cheese. Repeat layers.
  5. Cover with foil and bake for 30 minutes; remove foil and bake an additional 15 minutes until cheese is bubbly.
