  • 8 oz chorizo, diced
  • 1 can (15 oz) low-sodium chickpeas, drained
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and diced chorizo; cook until chorizo is browned, around 5-7 minutes.
  3. Mix in drained chickpeas and fire-roasted diced tomatoes. Allow to simmer for 5-10 minutes, stirring occasionally.
  4. Pour in vegetable broth along with cumin and smoked paprika. Bring to a gentle boil then reduce heat and let simmer for 20-30 minutes.
  5. Just before serving, fold in spinach or kale until wilted. Adjust seasoning as needed and serve hot.
