- 1 can (14.5 oz) fire-roasted diced tomatoes
- 4 cups low-sodium vegetable broth
- 2 cups fresh spinach or kale
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic and diced chorizo; cook until chorizo is browned, around 5-7 minutes.
