  • 2 lbs boneless turkey breast
  • 1 cup long-grain rice
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tsp dried thyme
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Chop the onion and mince the garlic. Rinse the rice under cold water until clear.
  2. Optional: Sauté onion and garlic in a skillet over medium heat until translucent.
  3. Place turkey at the bottom of the slow cooker. Layer with sautéed onions and garlic, rinsed rice, vegetables, broth, thyme, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Check for doneness; turkey should be cooked through and rice tender.
  6. Shred turkey in the pot using two forks and stir gently before serving with fresh parsley on top.
