  • 3 cups boneless, skinless chicken breasts, diced
  • 4 cloves fresh garlic, minced
  • 1 cup green or brown lentils, rinsed
  • 4 cups fresh baby spinach
  • 2 medium carrots, sliced thinly
  • 1 medium yellow onion, diced
  • 6 cups low-sodium chicken broth
  • 2 tsp dried thyme
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by dicing the onion and garlic, and slicing the carrots.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook until fragrant.
  3. Stir in diced chicken and sliced carrots; cook until chicken is browned.
  4. Add rinsed lentils and chicken broth; bring to a boil then reduce heat to simmer for about 20 minutes until lentils are tender.
  5. Mix in fresh spinach until wilted and season with thyme and paprika.
  6. Taste before serving; adjust seasoning with salt or pepper as needed.
