- 1/2 cup plain breadcrumbs
- 1 small onion (finely chopped)
- 3 cloves garlic (minced)
- 1 cup low-sodium beef broth
- 1/2 cup heavy cream
- 2 large Russet potatoes (peeled and cut into chunks)
- 4 tbsp unsalted butter
- 2 tbsp fresh parsley (chopped)
- 2 tbsp fresh chives (chopped)
- 1 tsp soy sauce
- Salt and pepper to taste
Instructions
- In a large bowl, mix ground beef, breadcrumbs, onion, garlic, soy sauce, salt, and pepper until combined. Form into meatballs.
- Heat olive oil in a skillet over medium-high heat. Sear meatballs for about 8 minutes until browned on all sides; set aside.
- In the same skillet, add beef broth and scrape up brown bits from the bottom. Stir in heavy cream and simmer until slightly thickened.
- Return meatballs to the skillet to coat them in the gravy.
- Boil peeled potatoes until fork-tender. Drain and mash with butter, cream or milk, garlic, parsley, chives, salt, and pepper until smooth.
- Serve meatballs over mashed potatoes drizzled with gravy.
