Ingredients

Scale
  • 1 lb ground beef (lean)
  • 1/2 cup plain breadcrumbs
  • 1 small onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup low-sodium beef broth
  • 1/2 cup heavy cream
  • 2 large Russet potatoes (peeled and cut into chunks)
  • 4 tbsp unsalted butter
  • 2 tbsp fresh parsley (chopped)
  • 2 tbsp fresh chives (chopped)
  • 1 tsp soy sauce
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, onion, garlic, soy sauce, salt, and pepper until combined. Form into meatballs.
  2. Heat olive oil in a skillet over medium-high heat. Sear meatballs for about 8 minutes until browned on all sides; set aside.
