  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or 1 cup coconut milk for vegan option)
  • 2 sprigs fresh thyme (or 2 tsp dried thyme)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Score the chestnuts and roast on a baking sheet for about 20 minutes until shells crack.
  2. In a large pot, heat olive oil over medium heat. Sauté chopped onion and minced garlic until translucent.
