  • 2 medium sweet potatoes, diced (about 2 cups)
  • 1 cup bell peppers, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté for 2-3 minutes until translucent.
  2. Add ground beef to the skillet. Break it apart as it cooks, seasoning with paprika, cumin, salt, and pepper. Cook until browned (about 5-7 minutes).
