- 1 lb fresh salmon fillets
- 2 chipotle peppers in adobo sauce, minced
- 3 tbsp honey
- 2 tbsp lime juice
- 1 cup ripe pineapple, diced
- ¼ cup cilantro, chopped
- 8 corn tortillas
- ½ red onion, finely chopped
- Salt and pepper to taste
Instructions
- Mix chipotle peppers, honey, lime juice, salt, and pepper in a bowl to create the marinade.
- Place salmon fillets in a resealable bag and pour the marinade over them. Let marinate for at least 30 minutes.
- Preheat grill to medium-high heat (400°F or 200°C). Lightly oil the grill grates. Grill salmon skin-side down for about 4-5 minutes on each side until it flakes easily.
- In a separate bowl, combine diced pineapple, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
- Flake grilled salmon into bite-sized pieces and serve in warmed tortillas topped with pineapple salsa.
