- 3 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 8 oz cream cheese (softened)
- 1 cup shredded mozzarella cheese (divided)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- In a skillet over medium heat, add olive oil and sauté spinach until wilted (about 2-3 minutes). Stir in garlic powder and Italian seasoning.
- In a mixing bowl, combine sautéed spinach, cream cheese, and half of the mozzarella until well mixed.
- Take a chicken breast, place about 2 tablespoons of filling in the center, and roll it up. Secure with toothpicks if needed.
- Place rolled chicken seam-side down in the baking dish. Top with remaining mozzarella. Bake for 25-30 minutes until golden brown.
