Ingredients

Scale
  • 2 cups mashed potatoes (fresh or leftover)
  • 1 cup shredded cheddar cheese
  • 1 large egg, beaten
  • 1 cup breadcrumbs (plain or seasoned)
  • ¼ cup green onions, finely chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the mashed potatoes, cheddar cheese, beaten egg, green onions, salt, and pepper until well combined.
  2. Shape the mixture into golf ball-sized puffs.
  3. Roll each puff in breadcrumbs until fully coated.
