  • 1.5 cups sharp cheddar cheese, shredded
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 cup bell peppers (any color), diced
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp smoked paprika

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onions and minced garlic until golden brown (about 3-4 minutes).
  2. Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned (approximately 5-7 minutes).
  3. Stir in diced bell peppers, salt, pepper, and paprika. Cook until peppers are slightly softened (about 3-4 minutes).
  4. Add rinsed rice and chicken broth; stir to combine. Bring to a gentle boil.
  5. Cover the skillet and reduce heat to low. Simmer for about 15-20 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat; sprinkle cheese on top, cover again for 2-3 minutes until melted.
