Ingredients

  • 12 oz Italian sausage (spicy or mild)
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1 cup bell peppers (sliced, mixed colors)
  • 1 medium onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp Italian seasoning
  • ½ cup Parmesan cheese (grated)
  • Salt and pepper to taste

Instructions

  1. Slice the sausage into bite-sized pieces and chop the bell peppers and onion.
  2. In a large skillet over medium heat, brown the sausage for about 5-7 minutes until crispy.
  3. Add the sliced onions and bell peppers, sauté for about 3-4 minutes until softened.
  4. Boil water in a separate pot and cook penne pasta until al dente; drain and reserve some pasta water.
  5. Lower the heat in the skillet, add minced garlic, cooking for about 1 minute. Gradually stir in cream while whisking continuously until slightly thickened (about 3-4 minutes).
  6. Toss in cooked pasta along with spices and Parmesan cheese; mix until well combined. Adjust consistency with reserved pasta water if needed.
