  • 2 tbsp poppy seeds
  • 2 large eggs
  • ½ cup whole milk (or almond milk)
  • Zest of 1 lemon
  • 3 tbsp fresh lemon juice
  • ¼ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and poppy seeds.
  3. In another bowl, beat the eggs with sugar until light and fluffy. Mix in melted butter, milk, lemon zest, and lemon juice until well combined.
  4. Pour the wet ingredients into the dry mixture and gently fold until just combined; avoid overmixing.
  5. Fill each muffin cup about two-thirds full with batter and bake for 18-20 minutes or until golden brown.
  6. Allow the muffins to cool in the pan for five minutes before transferring them to wire racks.
