  • 1 cup dried red kidney beans (soaked overnight)

  • 1 green bell pepper, chopped

  • 2 bay leaves

Instructions

  3. Add sliced sausage and minced garlic; cook until sausage is browned (about 5 minutes).
  4. Stir in soaked beans, water or broth, bay leaves, and Cajun seasoning.
  5. Bring to a gentle boil; reduce heat and simmer uncovered for about 1 hour or until beans are tender.
  6. Cook rice separately according to package instructions.
