Ingredients

  • 1/4 cup tahini
  • Juice of 1 large lemon (about 2 tbsp)
  • 2 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp ground cumin (optional)
  • 1/2 tsp sea salt (adjust to taste)
  • 34 tbsp water or aquafaba for desired consistency

Instructions

  1. Gather all ingredients and prepare by draining and rinsing the chickpeas.
  2. In a blender or food processor, combine chickpeas, tahini, lemon juice, garlic, cumin (if using), salt, and olive oil.
  3. Blend on high speed until smooth. Add water or aquafaba gradually to reach your preferred consistency.
  4. Taste and adjust seasonings as needed.
  5. Transfer hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika or herbs.
