Ingredients

  • 4 cups kale, chopped (remove tough stems)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash the kale leaves thoroughly under cold water; pat dry. Remove tough stems and chop into bite-sized pieces.
  2. Slice cherry tomatoes in half, dice cucumber, and thinly slice red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper until combined.
  4. In a large bowl, toss kale with cherry tomatoes, cucumber, and red onion. Drizzle half of the dressing over the salad while gently tossing to coat.
  5. Allow the salad to marinate for about 10 minutes for flavors to blend.
